They may have in-house catering services that you’re required to use or charge a fee if you want to bring someone else in. From there, you can work out things like seasonal selections, presentation specifics and serving logistics. Also voice any dietary restrictions you want to accommodate. Work closely with your caterer or venue to ensure you feel comfortable with your wedding menu options. Once you understand what you’re working with, then you let the creative juices flow:
1. Jollof rice
If this is not on the menu list then the wedding party is a fluke. Jollof rice is the king of all Nigerian meals on any occasion.
2. Pounded yam
This delicacy also known as Iyan by natives, is prominent to the south-western part of Nigeria. Pounded yam is a special food for special occasions in Nigeria such as in marriages, coronations, house warming, funeral to mention a few.
3. Fried rice
This is usually served with jollof rice. It is an alternative for rice and stew or jollof rice too.
4. Porridge
Yam porridge is made with yam, oil, vegetables and preferably tomatoes. Pottage is cooked in many different ways in accordance with national food cultures, customs and traditions.
5. Small chops
Small chops are finger foods served at parties. These include spring rolls, baby puff puff, samosas, peppered gizzards, chicken kebab, asun, stick meat, mini sausage rolls, fish rolls and a lot more.
