I Love the New Year! It’s my favourite holiday (after Christmas)… from the fireworks to the good cheer but most especially the FOOD. I love the fact that no matter how financially buoyant you are or not, there is still always some sort of feast albeit, minimal, to celebrate this wonderful time.
In a world where food is fast gaining grounds and taking its place as grandmaster of survival, everyone wants to be a part of the process of creating what goes in their bellies. This is a time where everyone is an acclaimed foodie and tries out recipes. In different cultures around Africa, there’s a mouth watering variety of food that come out to play during the holiday. We have turkey, chicken, lamb, rice, potatoes, fufu, okra and so on.
So if you are tired of eating out and you want to wow your family and friends with something you have created on your own, here are 3 quick food recipes, a different way to have rice and potatoes and a delicious spicy roast chicken recipe, also a drink recipe to wash it all down (the weather is good for a cool drink) for you to celebrate the New Year!
RISOTTO (creamy rich rice) serves 4
1 cup uncooked regular long-grain white rice
1 clove garlic, minced
3 cups Chicken Broth or 3cups of water and 3 bouillon cubes
1 tablespoon grated Parmesan cheese
1 dash ground black pepper
