Sharwama, a popular snack among Nigerians, is the rotation of frilled meat in turkey. Its a very filling and delicious snack available in all fast food joints. Here is how to prepare:
Ingredient:
- 1 tablespoon of olive oil
- 1 pound beef top sirloin
- 1 tablespoon of sharwama seasoning/ground cumin/ground coriander/sweet spanish paprika
- 3/4 tablespoon of ground turmeric
- 1/2 tablespoon ground cloves
- 1/2 tablespoon of cayenne pepper
- 1/2tablespoon of ground cinnamon
- 1 tablespoon of ground allspice
- 1/2 tablespoonof salt
- 1(10 ounces) package large flour tortillas
- Tortilla
Yoghurt sauce
- Greek 3 tablespoons plain yoghurt
- 1/2 lemon juice
- Finely minced or grated garlic
Dill
- 1/2 cup of Tahini
- 1/2teaspoon salt
- Mint, sliced
Tahini sauce
- 1/2 cup Tahini paste
- 1 Tablespoon extra-virgin olive oil
- 1/2 lemon, juiced
- Kosher salt
Method of preparation
- Marinate the beef by whisking the olive oil, vinegar, lemon juice, sharwama seasoning and garlic in a large bowl. Add the sirloin beef and coat with the marinade. Refrigerate for more than two hours.
- Preheat oven to about 425 degrees, leave for 50 minutes or heat olive oil in a skillet over medium heat. Add the marinated beef, Sharwama seasoning and salt. Turn occasionally until beef turns brown.
- Depending on your choice, whisk yoghurt sauce in a small bowl until creamy. Then combine with tahini sauce, oil, lemon juice and salt.
- Spread marinade sauce among tortillas, top with 2 tablespoons of your preferred sauce( yoghurt or tahini sauce) in the centre and roll up.
- Set grill to medium heat and allow tortillas to grill for about 2 minutes.
- And voila! The sharwama is ready for eating.
