Rice and stew is a ‘Sunday Sunday’ meal tradition in this part of the world. Most Nigerian homes have rice and stew on the Sunday menu list. How this came to be is still unknown but we are not complaining.
But do you know you can make your stew without oil? This is good for you if you are trying to lose weight or have some health reservations. To prepare an oil-less Tomato stew, here are the ingredients you need:
- 10 Tomatoes
- 1 tablespoon crushed red pepper
- 5 red bell peppers
- 3 large onions
- 1 tablespoon thyme
- 1 tablespoon curry
- Chopped ginger
- Chopped garlic
- Bay leaves
- Chopped carrots
- Meat (Beef or chicken)
- Salt
Method
- Chop the onion, tomatoes and pepper into small sizes. Blend the chopped ingredients in a blender until becomes a paste.
- Pour the tomato paste into a large pot. Allow water in paste to dry up.
- In another pot, add the meat(beef or chicken), curry, thyme, bay leaves, chopped ginger, chopped garlic, chopped carrots and salt. Allow meat to boil until it softens.
- Leave boiled meat to cool then drain the fat extract from the surface of the meat stock.
- Pour boiled meat and meat stock into pot containing boiled tomato paste. Allow mixture to boil and add salt to taste.
- Cook at low heat and stir mixture at intervals gently.
- Taste the mix to ensure the raw tomato is ready. If it still tastes raw, add some water and allow to boil well.
- When the raw texture is gone, then you should stop boiling.
- Your oil-less tomato stew is now ready. Serve hot with rice or any delicacy you choose.
